Taco Tuesday! Re-Sharing a Beloved Guac Recipe

Popping in to share some joy for Taco Tuesday. I spotted this wonderful recipe remembering Jennell Jaquays on the Book of Faces, and I asked Rebecca if I could reshare this with you. This recipe is courtesy of Rebecca’s generosity.

Becky and Jennell’s Guacamole of Awesome

Feeling like some guac? But have a craving for texture and freshness? Try this take on guacamole. It originated from my style of making guacamole, but with a bit of flair from Jennell.

Best when mixed in an authentic Mexican mortar and pestle, or “Molcajete”.

Ingredients:

1 avocado

1 clove of garlic

2 teaspoons of lime juice

1 sweet onion

1 small tomato

Peel the garlic and place the cloves in the molcajete. Use the pestle to mash them into a gooey mush.

Cut the avocado in half, remove the seed, and then using a spoon, scoop out the plant meat and place it in the molcajete. Mash the two ingredients together until well blended. While blending, squirt in the lime juice so all three ingredients are blended.

Peel and then dice the onion into small squares.

Slice the tomato into small squares.

Fold in the tomato and onion into the mix, but do NOT crush the onion and tomato. Use a spoon to perform the folding. It’s important to not damage the onions or tomato, so they add texture to the guacamole.

Break out your favorite chips and start dipping, or lay this mixture in tostadas or tacos.
